Learning by Doing: Food, Waste, & Climate Change by Jennifer Smith

Food disposal is a part of the food system rarely discussed, let alone explicitly taught. After all, 42 percent of food ends up in our trash bins and landfills. When students at Monticello Middle School in Illinois noticed the degree of waste in their own cafeteria, teacher Jennifer Smith saw an opportunity to teach science and writing authentically through stewardship, wiggle worms, and action.
